Ingredients Serving: 2

  1. 4 eggs
  2. 1/2 cup mayonnaise
  3. salt and pepper to taste
  4. 1 tsp thyme chopped
  5. 4 lettuce leaves
  6. 1 tsp parsley leaves

Instructions

  1. Boil the eggs for 10 mins-12 mins.
  2. Cool them, peel and chop into cubes.
  3. In a bowl add the chopped eggs. Add mayonnaise. Season with salt and pepper. Toss all the ingredients together.
  4. In serving bowl, spread lettuce leaves at the bottom. Spoon the egg-mayo mixture on top. Garnish with thyme and parsley leaves.
