Ingredients Serving: 6

  1. All purpose flour (maida) 250 gm)
  2. Sugar powdered 250 gm
  3. Egg 4
  4. Unsalted soft butter 250 gm
  5. Baking powder 1 and 1/4 teaspoon
  6. Baking soda 1 /2 teaspoon
  7. Vanilla essence 1 tbsp
  8. zest of 1 orange
  10. Cinnamon 2 pieces of 1/2 inch
  11. Cloves 4
  12. Small cardamom 6
  13. Nutmeg powder 1/4 tsp
  14. For Caramel
  15. Sugar (120 gm) 1/2 cup
  16. Water 1/4 cup and 1 tbsp
  18. Fresh orange juice 1/2 to 3/4 cup
  19. Honey 1 tablespoon
  20. Black raisins 50 gm
  21. Cranberries 50 gm
  22. Prunes(pitted) 50 gm
  23. Tutti frutti 50 gm
  24. Cashewnuts 50 gm coarsely chopped


  2. Two days before soak dried fruits and nuts in juice and honey
  3. For spice powder grind together cinnamon, nutmeg, cloves and cardamoms.
  5. For making caramel, take sugar in a saucepan and cook on medium heat without stirring. Just swirl the pan in between till you get a golden colour. Add water and set aside.
  6. Separate the egg yolks and egg whites. Whip egg whites till firm peaks are formed.
  7. Sift together all purpose flour, baking powder, baking soda and cake spice powder. Set aside.
  8. Beat butter and powdered sugar till creamy.
  9. To this add egg yolks and vanilla essence. Beat well.
  10. Now to above mixture add half of flour mix and caramel syrup. Fold nicely
  11. Repeat above step till all of flour mix and caramel is incorporated.
  12. Now add half quantity of beaten egg whites. Fold well and repeat for remaining egg whites
  13. Finally toss the soaked nuts and dried fruits with a tablespoon of all purpose flour. Add this fruit mixture and orange zest to the cake batter. Fold gently.
  14. Drop batter into a greased and lined baking tray. Tap it nicely to remove air bubbles
  15. Top with almond flakes
  16. Bake in a pre heated oven at 180 degrees Celsius for 30 minutes.; then at 160 degrees Celsius for 30 more minutes .
  17. Insert toothpick to check
  18. Let cake cool. Cut and serve
