ABOUT CINNAMON PUMPKIN CUPCAKES RECIPE

Cupcakes are usually made with different essence or choco chips or nut and fruits. Here I've tried with pumpkin puree and cinnamon powder. Frosting too is done with the combination of pumpkin puree and little whipping cream. It's mainly a Thanksgiving giving recipe.

Ingredients Serving: 4

  1. all purpose flour 1cup
  2. Pumpkin puree 1/2 cup
  3. Unsalted butter 50 gms
  4. Granulated sugar 3/4 cup
  5. Egg 2
  6. Cinnamon powder 1/2 teaspoon
  7. baking powder 3/4 teaspoon
  8. Salt 1/4 teaspoon
  9. For Rustic frosting
  10. Pumpkin puree 1/4cup
  11. Whipping cream 1/4 cup
  12. Cinnamon powder 1/4 teaspoon
  13. Cinnamon stick for garnishing

Instructions

  1. Microwave pumpkin and make puree in a blender.
  2. Sift all purpose flour, baking powder, salt and cinnamon powder together.
  3. Whisk butter and sugar until creamy.
  4. Separate egg yolks and add one by one till it turns pale in colour.
  5. Whisk egg white separately till stiff peaks.
  6. Preheat oven to 180 degree centigrade.
  7. Add all the dry ingredients to the egg mixture and add pumpkin puree.
  8. Gently add egg white and mix into cut and fold method.
  9. Grease cup liners and fill the mixture.
  10. Bake it for 30 minutes.
  11. Let it cool
  12. Since it's rustic frosting add pumpkin puree, cinnamon powder to the whipping cream and frost on the cupcakes.
  13. Garnish it with cinnamon stick as a pumpkin stalk.
  14. Cinnamon pumpkin cupcakes are ready.
