ABOUT Cripsy Yummy Maddur Vada of Karnataka RECIPE

I always tasted the vada in the hotel called Maddur tiffinis on the Mysore-Bangalore highway and thought its something really mystery to prepare because when you put inside the mouth it would be so yummy.I have a friend by name Rahul who posted maddur vada in Instagram and I immediately thought to make and asked him the recipe and I thank him to inspire me and share his secret recipe. This is something children,Pregnant ladies,Elderly people (All age group) love it.

Ingredients Serving: 4

  1. Maida or All purpose flour 1/2 cup
  2. Rice flour 1/4 cup
  3. Sooji Rava 1/4 cup
  4. Coriander chopped finely ( Handful)
  5. Ginger small sized finely chopped
  6. Green Chilly - 2
  7. One lemon sized Onion
  8. Ghee or hot oil 2 tbps
  9. Salt 1 tbps
  10. Groundnut - 1/4 cup
  11. Refined oil to fry - 3 cups

Instructions

  1. Add maida, sooji rava and rice flour into a bowl with the measurements mentioned in the ingredients list.
  2. Now add the chopped coriander leaves,chillies,ginger and onion into the bowl containing the flours and grind the groundnut in the stone grinder and add it to the mixture
  3. Add heated oil or ghee and the salt and mix the mixture without adding water and keep aside for 10 mins and this is where you get the crispy form.
  4. After ten mins slowly "Sprinkle" the water into the mixture and make a dough and keep aside
  5. Now take a kadai with oil to fry and heat it in the medium flame and meanwhile take a plastic paper to make base for the vada
  6. Gently grease your palm with oil and take the small lemon sized of mixture prepared from the dough in the bowl and place it on the plastic paper and press it
  7. Evenly flatten the lemon sized dough placed in the plastic paper and immerse it in the hot oil kept on the stove.
  8. Tada!, Your crispy maddur vada is ready to eat. Have it with awesome coconut Chutney with hot Tea. Enjoy!
