ABOUT Baingan ka bharta RECIPE

A yummy and super spicy roasted eggplant mixed with peas and spices. It is always enjoyed along with bafla, baati and makke ki roti.

Ingredients Serving: 4

  1. Big eggplant for bharta 2
  2. Tomatoes roasted 2
  3. Onion chopped 1
  4. Green chillies 2 crushed
  5. garlic paste 1 tsp
  6. Ginger Paste 1 Tsp
  7. Cumin seeds 1tsp
  8. Asaefotida 1/4 tsp
  9. Green peas 1/4 cup
  10. Salt to taste
  11. Turmeric 1/2 tsp
  12. Red chilly pwd 1/2 tsp
  13. Coriander pwd 1 tsp
  14. Coriander leaves for garnish
  15. Oil to cook


  1. First of all make a cut on eggplant and insert 2 garlic cloves inside of eggplant. Then roast eggplant in gas tandoor till it softens completely. Cool it completely and take off the burnt skin of eggplant and keep it aside.
  2. Roast tomatoes also in gas tandoor. When tomatoes too softens take it out of tandoor and take off the burnt skin of tomatoes.
  3. Take a wok. Pour 1 tbsp ghee or oil in it. When oil starts heating put cumin seeds, asaefotida, green chillies paste, ginger garlic paste and onion.
  4. When oil turns golden in color. Add green peas and also salt to taste.
  5. When green peas cooked, add all dry spices and chopped roasted tomatoes.
  6. When oil starts separating then add roasted and chopped eggplant.
  7. Keep stirring firmly till oil separates. garnish it with coriander leaves.
  8. Serve with makke ki roti , baafla or bati.
