ABOUT Mexican Corn on the Cob... RECIPE

A simple yet an amazingly awesome one done in just a few minutes. It can be a delightful snack that is spicy, tangy and full of melted cheese oozing out. A cheesylicious treat for all. Warning !!!!!!! It is not for the weak hearted. And that is why it makes for a perfect snack to have during pregnancy mood tantrums.

Ingredients Serving: 4

  1. 4 to 6 corn on the cobs
  2. 1/4 th cup mayonnaise
  3. 1 tbsp paprika powder
  4. 1 tsp cayenne pepper powder
  5. 1/2 tsp Salt
  6. 3 tbsp lemon juice
  7. 1 cup shredded mozzarella cheese and cheddar
  8. 3 tbsp melted butter


  1. Boil the corn with some salt added to it.
  2. Keep all the other ingredients handy. As soon as it is boiled, remove them from the vessel, apply a layer of butter at first.
  3. Next is to apply a generous layer of mayonnaise, followed by cheese.
  4. It is best eaten when hot, so you have to be pretty much quick at making it.
  5. You can use any cheese of your choice. I used mozzarella and cheddar.
  6. Sprinkle paprika and cayenne. It is very spicy, so you can skip one of the peppers if desired. Squeeze some fresh lemon juice on top.
  7. Serve immediately. It tastes heavenly when hot.
