ABOUT Indian Butter Beans Masala... RECIPE

Fava beans or lima beans and very popularly known as Indian butter beans are a well rounded source of nutrition like any beans and are rich in protiens, iron, fibre and folate. They are rich in molybdenum and are good sources of copper and manganese. They come in fresh varieties, frozen and also dry ones. All are equally good, only thing is that the cooking time differs.

Ingredients Serving: 4

  1. 300 gm butter beans fresh frozen ones
  2. 1 tsp ginger garlic paste
  3. 1 tsp red chilli powder
  4. 1 tsp cumin seeds
  5. 2 onions finely chopped
  6. 2 tomatoes finely chopped
  7. 3 green chillies finely chopped
  8. 1 tsp salt
  9. 1/8 th tsp asafoetida
  10. 2-3 tbsp fresh grated coconut
  11. 1/4 th cup finely chopped coriander
  12. 2 tbsp oil or ghee


  1. In a cooking pot, heat ghee and add cumin seeds.
  2. After they splutter, add ginger garlic paste and asafoetida.
  3. Now add chopped onions and green chillies.
  4. Saute until light brown and then add the tomatoes.
  5. Cover and saute until soft for 4 to 5 minutes with a lid on.
  6. Now add the fresh frozen butter beans along with the grated coconut.
  7. Cover and cook until done for almost 20 minutes with a cup of water. If you are using dry beans, then you need to soak them overnight and then pressure cook for 7 to 8 minutes.
  8. Check after 20 minutes and if required simmer for a few more minutes. The water would dry up by then and adjust the consistency accordingly
  9. It should be a semi thick gravy to go well with rotis and rice both.
  10. Garnish with coriander and serve hot.
