ABOUT Sweet pongal RECIPE

Sweet pongal is one our sweet in christmas day. Idly,sambar and sweet pongal or kasari id special starting for christmas day morning.Our special ingredient is Editable Camphor. It enhances the taste of the dishes. It is used mainly in sweets and desserts. We use it in making Sakkarai Pongal which helps to enhance the aroma and flavor. It should be added only a pinch.

Ingredients Serving: 2

  1. Rice – 1 cup
  2. Jaggery (grated) – 2 cups
  3. Channa Dal – 4 Tbsp
  4. Water 1/4 cup
  5. Green Cardamom powder – 1/2 tsp (or 3-4 no.)
  6. Sugar/Kalkandu – 3-4 Tbsp (optional)
  7. Pachai Karpooram (edible camphor) – a pinch OR Jathikai (Nutmeg) powder –  a pinch
  8. Milk 3 cup
  9. Cashewnut 3-4
  10. Raisin 3-4
  11. Ghee 4 to 5 tsp

Instructions

  1. Wash the rice and keep aside. Boil the milk and when it comes to a boil, add in the rice. Alternatively, you could combined the washed rice and milk and cook it in a pressure cooker for 3-4 whistles.
  2. Boil the channa dal until tender and keep aside. (You could combine this with the rice in the pressure cooker method in the above step, if you are not making it on Pongal day)
  3. Combine the grated jaggery with 1/4 cup water and cook to 1 string consistency. Skim off any impurities in the jaggery. They usually float on the top after the jaggery is melted.
  4. Then mix in the cooked rice from and the cooked channa dal from and cook for 10-15 minutes, Do not mash the rice,stir occanally Cook 15-20 minutes. At this point, add 4 Tbsp of ghee and mix well. Cook for another 5-10 minutes, do not cook for too long, the rice will harden and the Pongal will be gritty.
  5. Mix in the cardamom and nutmeg/pachai karpooram powder and remove from heat.
  6. Heat 2 Tbsp of ghee and add the cashews into it. Fry the cashews in it until golden brown, then add raisins.Add and garnish this into the chakkara pongal.
  7. Serce hot or warm.
