Ingredients Serving: 10

  1. corn 2 cups
  2. quinoa 3/4 cup - uncooked
  3. black beans 2 cups - cooked
  4. red bell pepper 1 1/4 cup - diced
  5. onion 1/4 cup - chopped
  6. cilantro - 1/2 cup - packed - chopped
  7. carrots - 1/2 cup - thinly sliced
  8. avocado 1
  9. olive oil 2 tbsp
  10. lemon juice 4 tbsp
  11. salt to taste
  12. pepper to taste


  1. Steam corn and keep aside.
  2. Cook quinoa using water in the ratio 1:2 for quinoa:water. Allow to cool a bit.
  3. Mix olive oil, lemon juice, salt and pepper to make the dressing.
  4. Take all ingredients except avocado in a bowl. Toss together with dressing.
  5. Add avocado and toss gently to combine. Serve.

what is the local name of quinoa?

Maybe you could use cucumber for avocado, but it is not the same as avocado. Also rajma, though chana could also be a substitute. Just a suggestion. Sorry, Vardhini.
