ABOUT No Bake Chocolate Baileys Cream Pie RECIPE

With Christmas around the corner, we all need a dash of alcohol in our dessert. This is a very quick and easy dessert which you can put together in just 15 minutes.

Ingredients Serving: 6

  1. Biscuit crumbs – 2 cups
  2. Butter, melted – 10 tbsp
  3. Milk – 1 1/4 cup
  4. Cornflour – 3 ½ tbsp
  5. Baileys – If you want to make it non alcoholic add Amul cream – 3/4 cup
  6. Chocolate chopped – 1 cup
  7. Semi sweet chocolate – 400gms
  8. Heavy cream – 200 ml.
  9. Baileys (optional) 1 tbsp
  10. Whipping cream – I used Richs whipping cream – 1 cup
  11. Baileys – Optional – 2 tbsp
  12. Cocoa powder for dusting
  13. Chocolate chips for decoration.

Instructions

  1. Mix the melted butter and biscuit crumbs till it resembles wet sand.
  2. Press graham cracker mixture evenly into the bottom and up the sides of a 9 inch pie pan, Set it in fridge for 5 mins.
  3. Whisk the cornflour and 1/4 cup milk together in a small bowl. Set aside.
  4. Add chocolate and cream / Baileys to a no stick saucepan and melt on low heat until smooth, whisking it to keep it from burning.
  5. Once melted, add remaining milk and cornflour mixture and whisk together.
  6. Bring the mixture to a boil, whisking constantly. It will begin to thicken.
  7. Once boiling, whisk continuously for about 2 minutes, until fully thickened.
  8. Pour mixture into crust and smooth it out. Refrigerate for about an hour, then make ganache.
  9. To make the ganache, heat cream till it just starts to boil.
  10. Pour the hot cream over the chocolate and baileys and let it stand for few mins. Then stir till chocolate is completely melted. If any chunks are left, microwave for 15 seconds and stir well to melt.
  11. Let sit for about 5 minutes.
  12. Place pie back in the refrigerator to cool while you make the whipped cream.
  13. Whip the cream and the Baileys using a hand blender or a whisk till you gets stiff peaks.
  14. Spread an even layer of the cream over the pie. Dust with cocoa powder.
