Ingredients Serving: 10

  1. Bengal gram flour 1/2kg
  2. Rice flour 2tablespoon
  3. Ghee 1 cup
  4. Oil 1/2 cup
  5. Food colour orange a pinch
  6. Cardamom powder
  7. Lavang (cloves) 1 tablespooon
  8. Cashew nut and raisins 10gram each
  9. Sugar 750gram
  10. Water 2 cups

Instructions

  1. First step is to prepare sugar syrup
  2. Take a pan and mix sugar and water. Boil it.
  3. Boil it till we get one string consistency.
  4. Add cardamom raisins lavang cashew nuts to the sugar syrup. Mix it well. Close the stove and keep it aside.
  5. Now for making boondi. Mix bengal gram flour (besan) water rice flour and kesari colour together.
  6. The consistency should not be watery or very thick.
  7. Now heat the oil and ghee in a kadai and keep it in medium flame.
  8. Use the boondi ladle and pour the batter and gently tap it. Small droplets of batter will fall into the oil.
  9. The boondi should not become crispy. It should be removed before it turns crispy.
  10. Now add the boondi to the sugar syrup
  11. Keep it for half an hour til the sugar syrup and boondi mixes well.
  12. Add little ghee to the mixture and make small or medium sized boondi laddu balls out of it.
