ABOUT Potli Ka Masala.... RECIPE

An authentic masala for making paaya nihari or sirey paaya nihari both. It can also be used for cooking lamb head curry. The masala has to be tied up in a muslin cloth and dropped into the cooking pot. The slow cooking makes the masala also to release it's aroma and taste into the boiling broth. Hence it tastes and smells heavenly due to this particular special masala meant for it.

Ingredients Serving: 10

  1. Coriander seeds 1 tbsp
  2. Betel roots (Paan ki jad) a handful
  3. Bay leaves 5 to 6
  4. Stone flowers (Pathar ka Phool) 1
  5. Star Anise (Dagad Phool) 1
  6. Dried rose petals 2 tbsp
  7. Cubeb (tailed pepper) 1 tbsp
  8. black cardamom 2
  9. Spiked Ginger Lily 2
  10. Salt 1 tbsp
  11. Cloves 7
  12. Cinnamon sticks 4
  13. Mace 1/2 tsp
  14. Garam masala powder 1 tsp
  15. Cumin seeds 1 tsp
  16. Fennel Seeds 1 tsp
  17. Roasted chana dal or putana dal powdered 3 tbsp
  18. Dried Vetevier roots (Khas ki jad) a handful

Instructions

  1. Slightly roast all these masalas and store in an airtight container.
  2. Let it come to room temperature before storing.
  3. No need of any grinding.
  4. Add half of this masala for making nihari of about 12 lamb trotters.
  5. This masala can be used twice for cooking trotters upto 12.
  6. Hence if you are making more of it, then add whole of the masala.
