ABOUT Khaman Dhokla RECIPE

Khaman Dhokla is a traditional Gujarati delicacy that is usually served for breakfast. It is a very filling, sumptuous and nutritious and is best had with green chutney.

Ingredients Serving: 4

  1. 1 cup besan (chickpea flour)
  2. 1 tbsp. semolina
  3. 1/2 cup yoghurt
  4. salt to taste
  5. pinch of turmeric powder
  6. 1 tsp. ginger-green chilies paste
  7. 1 tsp. lime juice
  8. 1 tsp. sugar
  9. 1 tsp. eno fruit salt
  10. 2 tbsp. oil
  11. 1 tsp. sesame seeds
  12. 1/2 tsp. mustard seeds
  13. 1/4 tsp. asafoetida (hing)
  14. 2 green chilies, chopped
  15. few curry leaves
  16. 1 tbsp. fresh grated coconut
  17. 1 tsp. coriander leaves, chopped


  1. Take a bowl and mix together the besan, sooji, yoghurt, salt, ginger-green chilies paste, lime juice, sugar and turmeric powder with enough water to form into a batter of pouring consistency. Keep aside for 30 minutes.
  2. Add eno fruit salt to it along with 1 tbsp. water and gently fold it in. Pour into a greased steel container or plate and steam for 12-15 minutes. When cool, cut into desired shapes.
  3. Heat oil in a pan and temper with mustard seeds, sesame seeds, asafoetida, curry leaves and green chilies.
  4. After it stops spluttering, add little water and pour this mix on the steamed Dhoklas. Serve, garnished with coconut and coriander leaves.
