Chickpeas or Kabuli Chana or Chole are best known for being the star ingredient in hummus, they also offer a lot to promote weight loss and a healthy lifestyle. They are packed with protein and fiber -- two nutrients that can help you shed pounds. The most common dish we all prepare are Amritsari Chole or Chole Masala or Kadai Chole. Today in Jai Ki Rasoi Se given a new avatar made "Palak Methi Soya Chole"

Soak chickpeas over night or 6 8 hours before cooking
Add soaked chickpeas and one cup of water in a pressure pan or cooker. Cook till you get 4 to 6 whistles. Keep the pan/cooker aside get the pressure is released automatically
Heat oil in a nonstick pan or kadai. Once the oil is hot add cumin seeds and allow them to crackle
Add ginger garlic paste and cook till the moisture from the paste gets evaporated
Now add onion paste and cook till the paste become light brown
Add boiled chickpeas and cook for 2 minutes
At this stage add finely chopped spinach, fenugreek & dill leave and green coriander. Mix all ingredients. Cover and cook for 3 to 5 minutes. All greens leave their moisture
Add all dry ingredients like red chilli, turmeric and chole masala powder. Season it with salt according to taste. Mix all the ingredients
Cover and cook on low to medium flame for 10 to 15 minutes or till water is completely get absorbed and oil get separated
Finely add the slit green chill and mix it and cook it for another 2 minutes
The dish is ready to be served with any Indian bread
