An easy and tasty pulao , made with vegetables and paneer. This is a great tiffin idea.

Ingredients Serving: 4

  1. Paneer - 1/2 cup [diced into cubes]
  2. Methi leaves half brunch
  3. Onion 1
  4. Garlic paste 1tbsp
  5. Beans 3
  6. Carrots 1
  7. bottle gourd - 1/4 th cup
  8. Green chili paste 1tbsp
  9. Rice [soaked] half cup
  10. Vegetable stock 2 cups
  11. Salt


  1. Boil the rice in the vegetables stock and keep aside to cool down a bit.
  2. Chop all the veggies and arrange them.
  3. Now heat some oil or ghee in a pan, shallow fry the paneer cubes, drain and keep aside.
  4. Now in the same ghee, add the vegetables and stir fry, then add the green chilly paste, salt and give it a mix.
  5. Cook until all the vegetables are done, then add the paneer and mix. Then add the boiled rice and give it a good mix. Serve hot with some raita on the side.
