Everyone loves chole bhature, this is my recipe of making it.

Ingredients Serving: 6

  1. chickpeas 2 cup
  2. Oil 2 tbsp
  3. 1 tsp jeera [cumin seeds]
  4. bay leaf - 1
  5. cardamom - 2
  6. 1 cup chopped onion
  7. Adrak julian 2 inch
  8. Hari mirch julian 4-5
  9. Salt to taste
  10. Haldi 1/2 tsp
  11. Lal mirch powder 1 tsp
  12. Dhania powder [coriander powder] 2 tsp
  13. Zeera powder [cumin powder] 1 tsp
  14. 2 tsp chole masala
  15. 1 tsp kala namak [black salt]
  16. 1/2 cup malayi/cream
  17. Dhania leaves [coriander leaves] - handful
  18. For bhature :
  19. 1 cup maida
  20. 1/2 cup atta
  21. 1/2 tsp baking powder
  22. 2 tbsp sour curd
  23. Salt to taste
  24. A pinch sugar powder
  25. Sparkling water (soda) 1 bottle
  26. 1 tbsp suji

Instructions

  1. For chole : Soak the chickpeas overnight until they soak and fluff up. Take a cooker add chole,tea bag, you can add 1 amla too. soak it overnight. Add salt and boil it .
  2. Heat some oil in a kadhai, add cumin seeds and all the khada masalas [whole masalas] saute for a min ,now add onion. Saute for 5 min. Now add tomatoes, ginger juliennes and all the powdered masalas.
  3. Now add malayi and boiled chana ,simmer for 10-15 min. This is ready to be eaten.
  4. For bhaturas : Take all the ingredients and make a dough.rest it for 1 hr.
  5. Now heat ample amount of oil to fry the bhaturas. Divide the dough into equal parts and roll them out. Deep fry the bhaturas and serve hot with some chole on the side.
