ABOUT Shahi Moti Rasmalai (With Milk Powder) RECIPE

Rasmalai as the name suggests is a well known Indian dessert in which soft and spongy balls are added to a thickened creamy milk reduced gradually on a low heat. I have named them as shahi moti to these divine little balls made with milk powder as a variation because these balls look like white pearls in a milky ocean bed. Melt in mouth cute balls are a perfect dessert option for a weekend get together. It can liven up any party, be it a small or a big one. Best served chilled with lots of chopped pistachios and almonds.

Ingredients Serving: 6

  1. Milk powder 1 cup
  2. All purpose flour 1 tbsp
  3. cardamom powder 1 tsp
  4. ghee 1 tbsp
  5. Baking Powder 1 Tsp
  6. Beaten egg small 1 ( nearly 3 tbsp)
  7. Milk 1 litre
  8. cardamom pods crushed 2
  9. sugar 1/2 cup

Instructions

  1. Bring milk to a rolling boil.
  2. Add sugar and crushed cardamom pods.
  3. Simmer it on low flame.
  4. Meanwhile add all the ingredients to a bowl for making rasmalai.
  5. Mix well and add beaten egg little by little to make a smooth dough.
  6. Refrigerate it for 10 minutes.
  7. Make very small balls out of the dough.
  8. Flatten a bit and add it all to the simmering milk.
  9. Cover and cook for 10 minutes on a medium flame.
  10. Spongy cute little shahi moti rasmalai is ready.
  11. Serve it chilled with chopped pistachios and almonds.
