Rasmalai as the name suggests is a well known Indian dessert in which soft and spongy balls are added to a thickened creamy milk reduced gradually on a low heat. I have named them as shahi moti to these divine little balls made with milk powder as a variation because these balls look like white pearls in a milky ocean bed. Melt in mouth cute balls are a perfect dessert option for a weekend get together. It can liven up any party, be it a small or a big one. Best served chilled with lots of chopped pistachios and almonds.
