Ingredients Serving: 2

  1. Maida 2 Cups
  2. Baking powder 1 tablespoon
  3. Baking soda 1/4 tablespoon
  4. Salt 2 tablespoons
  5. Curd 1/4 cup
  6. Oil 2 tablespoons
  7. luke water as required to knead
  8. Potatoes 2 boiled and peeled
  9. Chili, 1 finely chopped
  10. Red chili powder 1/2 tablespoon
  11. Garam masala powder 1/4 tablespoon
  12. Ginger, 1 inch grated
  13. Coriander leaves, 5 tablespoon finely chopped
  14. Black sesame seeds / til 2 tablespoons
  15. Butter 2 tablespoons

Instructions

  1. Firstly, knead the dough for 10 minutes with ingredients listed for dough.
  2. Cover with a moist cloth and rest for 1 hour in warm place.
  3. Meanwhile, in a mixing bowl prepare stuffing mixing the ingredients listed for stuffing.
  4. After 1hour, pinch a ball sized dough and roll to 5 inch circular disk and place aloo stuffing in the centre.
  5. Take the edge and start pleating bringing to centre.
  6. Sprinkle some sesame seeds and coriander leaves.
  7. Gently roll to oval shape using rolling pin and brush with water over kulcha.
  8. Furthermore, slowly flip over and put it on hot tawa and press gently.
  9. After a minute, flip the tawa upside down and cook kulcha directly on flame till they turn golden brown.
  10. Finally, spread some more butter and serve aloo kulcha hot.
