ABOUT Whole Wheat Spinach Bread stuffed with Palak Paneer RECIPE

100% Whole wheat spinach bread stuffed with Palak Paneer. The bread is sugar free, healthy and tasty. Low in fats, high in fibers and proteins. Its a great one dish healthy menu for dinner.

Ingredients Serving: 6

  1. For Spinach Bread -
  2. Whole Wheat Flour - 3 Cups
  3. Warm water - 1 cup
  4. Spinach Puree - 1/2 Cup
  5. Dry Yeast - 1 Table Spoon
  6. Honey - 1 Table Spoon
  7. Olive Oil - 1/3 rd Cup
  8. salt - 1 tsp
  9. Sesame seeds for garnishing
  10. For Palak Paneer -
  11. Spinach Puree - 2 Cups
  12. Paneer - 1 cup
  13. Onion chopped - 1/2 cup
  14. Cumin seed powder - 1 tsp
  15. Coriander seed powder - 1 tsp
  16. Red chilli powder - 1 tsp
  17. Hing - 1/2 tsp
  18. Ginger Garlic Paste - 1 tsp
  19. Oil - 2 Table spoon
  20. Salt for taste

Instructions

  1. For Bread -
  2. Add dry yeast, honey and 2 table spoons of whole wheat flour to warm water. Mix it properly and keep it aside for 10 mins for rising.
  3. After the yeast has bubbled up, add the yeast mixture, salt and spinach puree to whole wheat flour and knead properly.
  4. When the dough is not sticky anymore, add the olive oil. Knead it for 10 mins.
  5. Knead with your palms, stretch lift and throw the dough. Knead it till dough is not sticking your hands.
  6. Now cover the dough with damp muslin cloth and keep it for its first rise for about 1 hour or till the dough has doubled in its volume.
  7. For Palak Paneer - (You can use any low calorie palak Paneer recipe you like.)
  8. Blanch the spinach leaves and make puree out of them. (Put the spinach leaves in boiling water, keep for 2 mins and then put them into ice cold water. This process is called blanching)
  9. Chop the Paneer into small cubes.
  10. Chop the onion into vertical pieces.
  11. Heat the oil, add the onions and saute till they are reddish brown in colour.
  12. Add ginger garlic paste and saute it.
  13. Add all the masalas, salt and saute till beautiful aroma starts coming out of them.
  14. Now add the Spinach puree. Mix it.
  15. Add Paneer cubes and mix.
  16. Keep it aside for stuffing.
  17. Stuffing and Baking -
  18. Preheat the oven at 180 degree C.
  19. After one hour of rising punch the dough back. Roll it into a rectangular sheet.
  20. Make small diagonal cuts along the length of the rectangle on both the sides in order to close the Bread after stuffing.
  21. Now fill the middle part of the rectangle with Palak Paneer.
  22. Hold one diagonally cut strip from one side of the rectangle and pull it over the stuffing. Now hold another strip from other side of the rectangle and pull it over the previous strip.
  23. In this way close the entire Bread by pulling the stripes from alternate sides over the stuffing.
  24. Seal the ends properly by folding them over the stripes.
  25. Now sprinkle with Sesame seeds and Keep the Bread for second rise for 1 hour.
  26. After second rising, bake the Bread at 180 degree C for about 30 Mins till it looks greenish brown in colour and is firm to touch. (It will look greenish because it has spinach puree)
  27. Please note that every oven differs in temperature. Take a call as per your judgement. It took me 30 Mins, it can take less or more time for you.
  28. Let the Bread cool. Do not cut it when it's super hot. You can cut it when it comes down to warm temperature.
  29. Enjoy your healthy bread!
