ABOUT Carrot cake with Cream Cheese Frosting RECIPE

This is really is the Best Carrot Cake, it's moist perfectly spiced made with fresh carrots and heavenly cream cheese frosting.

Ingredients Serving: 9

  1. 1c all purpose white flour, 1c light brown sugar
  2. 1tsp baking soda, 3/4 tsp baking powder
  3. 3large eggs, 1/4 tsp salt, 1tsp vanilla extract
  4. 1tsp cinnamon powder, 1/4tsp cloves powder, 1/4 tsp nutmeg powder, 1tsp ginger powder
  5. 1/2c walnuts, 1/2c raisins or sultan
  6. 2c shredded carrots (lightly packed), 2/3c (11tbsp) vegetable oil

Instructions

  1. Wash, peel, trim off the end n then grate to smaller shreds.
  2. Grease n dust 9"cake pan and line only the bottom with parchment paper, for cupcakes line a muffin tin with paper baking cups
  3. preheat oven to 300F or 180 C
  4. Sift dry ingredients flour baking soda baking powder,salt,spices powder.
  5. Using an electric hand beater beat eggs in a bowl, on low speed incorporate the sugar till creamy n then slowly add oil.
  6. add the vanilla extract n then the dry ingredients in batches
  7. Fold in the carrots along with the walnuts and raisins.
  8. pour batter into the prepared cake pan or using an ice cream scoop , divide batter into cupcake liners.
  9. Bake until a cake tester or tooth pick inserted in the centre comes out clean around 40 to 45 minutes n for cupcakes 35min.
  10. Transfer to a wire rack to cool before frosting.
  11. Once cake is cooled, invert on a board n peel off the parchment paper
  12. Cream cheese frosting - sift the icing sugar (2cups)
  13. In a bowl beat the cream cheese (113g softened) n butter (2tblsp) with an electric hand beater.
  14. Add the sugar n vanilla extract (1/2tsp) .
  15. Beat until light n fluffy ensuring to scrape down the sides with a spatula.
  16. Frost the cake or cupcakes as desired using an icing spatula or piping bag
