Reminds me of my childhood memories from where my love for vegetables has started and also moms hand made dish.

Ingredients Serving: 4

  1. Stems of 1 big size cauliflower
  2. 2 big potato
  3. 1 medium size brinjal
  4. 1 big Tomato
  5. Panchforon (Bengali five spices) 1/2 teaspoon
  6. Mustard Paste 2 - 3 tablespoon
  7. Turmeric powder 1/4 teaspoon
  8. Chilli powder 1/2 teaspoon
  9. Cumin powder 1 tablespoon
  10. Kashmiri Chilli powder (oprional) 1 teaspoon
  11. Ginger paste 1 teaspoon
  12. Salt as per taste
  13. Sugar as per taste
  14. Green Chillies 4 no
  15. Mustard Oil 2 tablespoon
  16. Bay leaf 1
  17. 1 cup water
  18. Coriander leaves 2 tablespoon (for garnishing)

Instructions

  1. Take 1 cup of water in a pan add 1 pinch of salt and add the cut stems of the cauliflower and boil for 4 min.
  2. Cut the potatoes like wedges, brinjal in medium sizes and tomato in 4 parts
  3. Heat mustard oil in a kadai and add bay leaf and panchforon
  4. Add potatoes and fry till it's slight golden
  5. Then add boiled stems and fry with the potatoes.
  6. Add ginger paste and tomatoes and cook till the tomatoes gets softened
  7. Add turmeric, cumin,chilli powders, salt, sugar and mustard paste
  8. Add little bit of water and cook till the masalas release oil from the side and cook in ow flame
  9. Then add the brinjal and again a little bit of water and cover it. Let the brinjal gets cooked but not mashed .
  10. In between take the lid and check if it's not sticking or else add little water and cook till the vegetables are done.
  11. Switch of the flame and add sprinkle coriander leaves on top.
