Ingredients to make Mix vegetables pickle

  • 1/2 kg carrot
  • 1/2 kg radish
  • 1/2 kg cauliflower
  • 10 green chilies ( optional)
  • 50 GM dry corinder
  • 10 GM mustard seeds
  • 5 GM kalonji
  • 3 black cardamon
  • Some black pepper
  • Some longue pieces
  • 2 sticks of daalchini
  • Normal salt 1/2 small tbs
  • Black salt 1/2 tbs
  • red chilly powder 1/2 tbs
  • turmeric powder 1/2 tbs
  • mustard oil 1 full big ladle

How to make Mix vegetables pickle

  1. Cut all vegetables in some thick pieces.
  2. Wash all vegetables properly
  3. Now keep all vegetables in a big sieve for 30 minutes.
  4. Dry all the vegetables in sharp sunlight on a cotton cloth for 2 days.
  5. Now, take a kadhai and add mustard oil in it and heat oil til the smoke of oil
  6. Then in another pan mix all the dry spices ( except red chilly powder, turmeric and Salt) and rost on sum gas for 2-3 minutes.
  7. Then in a grinder, grind all spices coarsely.
  8. When the oil becomes normal in temperature,add all the spices in it.
  9. Again switch on gas and mix all spice well for 1 -2 minutes.
  10. Now add salt red chilly powder, green chilies and turmeric powder and switch off gas.
  11. Mix well and add all dried vegetables in it.
  12. Stire pickle carefully.
  13. When it becomes cool, fill it in air tight container

My Tip:

When u handle pickle, always use dry wooden spoon with dry hands. You can start to consume the pickle after 3 days
