Handi Methi Chicken....

Ingredients to make Handi Methi Chicken....

  • chicken bone-in 1 kg
  • fenugreek bunch 1/2
  • salt 1 tbsp
  • ginger garlic paste 1 tbsp
  • red chilli powder 1 1/2 tbsp
  • oil 4 tbsp
  • cumin powder 1 tsp
  • chicken korma masala 1 tsp (optional)
  • turmeric 1/2 tsp
  • coriander leaves chopped 1/2 cup
  • tomatoes finely chopped 2
  • capsicum cubed 1

How to make Handi Methi Chicken....

  1. Heat oil in a kadai.
  2. Add ginger garlic and sliced onions.
  3. Saute for a minute or two on low to medium high heat.
  4. Add the chicken along with the rest of the spices
  5. Saute it on a high heat for 2 to 3 minutes.
  6. Now add finely chopped tomatoes and the fenugreek leaves.
  7. Cover and simmer on low heat for the next 20 minutes.
  8. Do not add water.
  9. Keep stirring a bit in between to ensure proper cooking.
  10. Add capsicum cubes just 5 minutes prior to switching off the flame to retain it's crunchy texture.
  11. Adjust salt according to taste at this stage and switch off the flame after done.
  12. Garnish with coriander and serve hot with naans.
