ABOUT Sev Usal RECIPE

Traditional spicy dish from vadodara (Gujarat). Made from dry white peas served with sev, bun and green onion.

Ingredients Serving: 2

  1. Dry white peas 1 cup
  2. Garlic 1 big bunch
  3. Ginger 1 inch
  4. Curry leaves 4-5
  5. Achar masala 2 tbsp
  6. Oil 1/2 cup
  7. Green chilles 3-4
  8. Onion 1 small
  9. Tomatoes 1
  10. Tamarind a pinch
  11. Salt as per taste
  12. Red chilliy powder 1 tsp
  13. For topping:
  14. Thick sev
  15. Coriander leaves
  16. Green onions, finely chopped
  17. Pav bun

Instructions

  1. Soak white peas for 4-5 hours. Boil white peas for one whistle.
  2. Peel garlic, cut onion, tomato, green chillies and ginger.
  3. Put garlic, green chillies, ginger, achar masala, curry leaves and 1 tsp oil in jar and grind it to a fine paste. Transfer it to a bowl.
  4. Add in the onion and tomatoes.
  5. Heat oil in a thick pan, add the ground masala. Saute for 1 minute.
  6. Add in the ground onion, tomato and saute for another 2-4 minutes or till they are done.
  7. Add salt, turmeric and red chilli powder. Add 2 cups of water. Bring it to a boil. (It will require a little more water than the usual gravies)
  8. Add in the boiled white peas, simmer for 10 minutes.
  9. In a serving bowl add this white peas gravy, top it with sev and green onion.
  10. Garnish with coriander leaves and pav bun.
