This recipe is ideal for breakfast and has balanced flavours. It has goodness of banana and walnut and tanginess of banana curd to balance sweetness of pancake

Ingredients Serving: 4

  1. 1 cup all purpose flour 200 gms
  2. 3 tbsp powdered sugar + 2 tbsp for caramalising walnut
  3. 2 banana mashed
  4. 6-8 walnut chopped + 8 halves
  5. 1 tsp vanilla essence
  6. 2 egg
  7. 1 tsp baking powder
  8. 2 tbsp melted butter + 1 tbsp for brushing pan
  9. For banana curd
  10. 2 egg
  11. 1/2 cup banana pureed
  12. 1/2 cup sugar
  13. 2 tbsp lemon juice
  14. 3 tbsp butter
  15. Few drops of yellow colour ( optional)
  16. Few straw berries and sliced banana

Instructions

  1. In a.mixing bowl.add egg sugar and melted butter and beat well .
  2. Now add mashed banana and vanilla essence flour and mix well
  3. Now add walnut in this mixture and fold
  4. Heat a pan and brush butter on it . Pour batter with paddle according to the size of pan cake needed
  5. Flip and cook.on.both sides
  6. For caramelized walnut
  7. Heat a non.stick.pan...Add sugar to it and letbot melt
  8. In another pan toast walnut
  9. Now add this toasted walnut to melted sugar and coat
  10. Place it on silicon sheet or parchment paper to avoid sticking
  11. For lemon curd
  12. Mix sugar egg lemon juice well .
  13. Then add banana puree to it .
  14. Heat this mixture on low flame stirring continuously till mixture start coating back of spoon
  15. Now add butter to it and let it melt
  16. Empty this in a bowl.and cling wrap
  17. Let it cool in fridge
  18. For serving
  19. Cut pancakes with cookie cutter to be of identical size .
  20. On a serving platter stack pancakes.one upon another . Drizzle banana curd on top and serve with fresh strawberries, sliced banana and caramelized walnut
