About Sweet potato cookies Recipe

Cookies made with sweet potato and the combination of millet flour. The aroma of coconut oil is the highlight of the cookie. Using sweet potato in baking is inspired from my friend.

Sweet potato cookies

Ingredients to make Sweet potato cookies

  • Sweet potato mashed 1 cup
  • wheat flour 1 cup
  • Pearl millet flour 1/2 cup
  • Sorghum flour 1/2 cup
  • Grated jaggery 3/4 cup
  • coconut oil 1/4 cup
  • butter 1/4 cup
  • Baking powder 1/2 teaspoon
  • salt a pinch

How to make Sweet potato cookies

  1. Sieve together wheat flour, pear millet flour, sorghum flour, baking powder and salt.
  2. In a bowl beat together coconut oil, butter and jaggery.
  3. Add the mashed sweet potato and beat again.
  4. Add the sieved flour to the butter, oil and jaggery mixture.
  5. Mix them until they are well combined.
  6. Cover it with cling wrap and refrigerate for 20 minutes.
  7. Pre heat the oven for 10 minutes at 180 degree centigrade.
  8. Roll thin the cookie dough.
  9. Cut them using a cookie cutter.
  10. Transfer them to the baking tray.
  11. Prick small holes in the cookie using tooth pick or a fork.
  12. Bake them for 16 minutes at 180 degree centigrade.
  13. Once done transfer to the cooling rack and cool them completely.
  14. Serve them or store in a airtight container.

My Tip:

Each oven differs. So adjust temperature and timing accordingly.
