About Adgai ( instant jackfruit pickle) Recipe

It is a popular pickle made in konkani style with raw jackfruit and raw mangoes

Adgai ( instant jackfruit pickle)

Ingredients to make Adgai ( instant jackfruit pickle)

  • Raw jackfruit 1
  • Raw mango 2
  • salt 100 g
  • Dry red chillies 10 -12
  • mustard seeds 2 tsp
  • coriander 2 tsp
  • methi 1/4 tsp
  • turmeric powder 1/4 tsp
  • hing 1/4 tsp
  • oil for roasting
  • water 1 litre

How to make Adgai ( instant jackfruit pickle)

  1. Wash mango and chop it into pieces
  2. Take one litre water and add salt to it and let it boil for 5 minutes
  3. Remove from heat and add mango pieces
  4. Cut jackfruit into medium size pieces
  5. Put it in a cotton cloth and steam it in an idli vessel for 15 minutes
  6. Allow to cool
  7. In frying pan fry red chillies, mustard,coriander, asafoetida and turmeric one at a time and keep them separate
  8. Remove mango slices from salt water
  9. Add only red chillies in the grinder and grind to a fine paste using the salt water
  10. Then add the other ingredients
  11. Mix cooked jackfruit pieces,mango pieces and ground masala well
  12. Store in a airtight jar

My Tip:

Though it is an instant pickle it tastes better the next day Can be stored in fridge for 15 to 20 days
