About THANDAI CHEESECAKE Recipe

Thandai has ingredient which has cooling effect on body,so is the name thandai(cooling).This time it was Thandai with a little twist or can say in new avatar. I tried my thandai mix in cheesecake and it really went very well.

THANDAI CHEESECAKE

Ingredients to make THANDAI CHEESECAKE

  • 1/2 cup digestive Biscuit crumb
  • 1/4 cup Milkmaid
  • For Cheesecake filling
  • 1/2 Cup cottage cheese 
  • 1/4 cup yoghurt thick
  • 1/2 cup Milkmaid
  • 1 tbsp  saffron milk
  • 1 tbsp gelatin (bloomed in 2 tbsp boiling water)
  • For Thandai Mix:
  • 30 almonds
  • 8-10 cashew
  • 1 tbsp melon seeds
  • 1 tbsp poppy seeds
  • 4 cardamom
  • 1/2 tsp black pepper corn
  • pistachios, rose petals and silver warq for garnish

How to make THANDAI CHEESECAKE

  1. IN A BOWL ADD 30 ALMONDS, 8 CASHEWS, 1/2 TSP BLACK PEPPER, 4 CARDAMOM
  2. 1 TBSP POPPY SEEDS, 1 TBSP MELON SEEDS, 1.5 TBSP PISTACHIOS & 1 CUP WATER
  3. SOAK FOR 3-4 HOURS
  4. REMOVE THE ALMONDS SKIN ( OPTIONAL) AND ADD EVERYTHING TO THE GRINDER
  5. ADD 1 TBSP GULKAND
  6. AND GRIND INTO A FINE PASTE
  7. GRIND 10-12 DIGESTIVE BISCUITS INTO COARSE POWDER
  8. TRANSFER IN A BOWL, ADD 1/4 CUP MILKMAID
  9. AND MIX WELL
  10. ADD 2 TBSP COOKIES AND MILKMAID MIXTURE IN SHOT GLASSES, PRESS IT AND PLACE IN FRIDGE TO SET
  11. BLOOM 1 TBSP GELATINE IN 2 TBSP HOT WATER, KEEP ASIDE
  12. IN A JAR ADD 1/2 CUP COTTAGE CHEESE, 1/4 CUP HUNG CURD,
  13. 1/4 CUP THANDAI PASTE, 1 TBSP SAFFRON MILK
  14. BLOOMED GELATINE AND 1/2 CUP MILKMAID
  15. BLEND TILL, WELL INCORPORATED.
  16. POUR THE MIXTURE INTO THE BISCUIT BASE
  17. REFRIGERATE AT LEAST 5 HOURS OR OVERNIGHT.
  18. GARNISH WITH ROSE PETALS, PISTACHIOS AND SILVER WARQ
  19. THANDAI CHEESECAKE IN SHOT GLASSES IS READY
