Roasted brinjal with tomato mash

Ingredients Serving: 3

  1. 3 medium Tomatoes chopped
  2. 3 big Brinjals/baigan
  3. 2 Green chillies/hari mirch chopped
  4. 1 tsp Ginger / Adrak chopped
  5. 3 tbsp Fresh coriander/hara dhaniya chopped
  6. 2.5 tsp Lemon juice /nimbu ka ras
  7. 1 tsp Red Chilli powder / Laal mirch powder
  8. salt to taste
  9. 2.5 tbsp Mustard oil/sarso tel

Instructions

  1. Wash and wipe the brinjal and make 2 small slits, then apply some oil all over it.
  2. Keep the brinjal on direct flame and roast it from all the sides ,keep turning the sides.
  3. Similarly roast the tomatoes and green chilies on direct flame till they get charred from all the sides.
  4. When they cool down then peel off the skin from the brinjals and tomato. Chop and mash this brinjal and tomatoes.
  5. Take a big bowl and add the mashed brinjal and tomatoes in it.
  6. Add in the chopped green chili,ginger,salt,chili powder,lemon juice and mustard oil.
  7. Mix this well and add in the chopped fresh coriander. Serve fresh.

lovely...it is very similar to the tomato poda we have in Odisha....but we use still lesser ingredients...can vouch for your recipe though :)
