Ingredients Serving: 4

  1. Brinjal ( baigan) - 250 grams
  2. Tomatoes - 4, chopped
  3. Green chilies - 8, chopped
  4. Onions - 5, chopped
  5. Oil - 6, tsp
  6. Salt as required
  7. Zeera - 1 tsp
  8. Fresh Coriander leaves for garnishing


  1. Wash the brinjals dry them and roast them on direct flame or grill in microwave or oven till skin becomes fully wrinkled or scorched. Remove the skin and mash the pulp very well.
  2. Heat oil in a pan add zeera when it splutters add onions, fry till transparent. Add tomatoes and green chilies cook for 5 mins.
  3. Add mashed pulp and salt, mix very well and cook for 5-7mins by stirring it continously.
  4. Baigan bharta is ready to serve. Garnish it with coriander leaves.
