ABOUT Punjabi Baigan Bharta RECIPE

My pride in vegetarian dishes is this Brinjal tangy spicy mash called Bharta. The roasted brinjal smells great when mashed with green peas.

Ingredients Serving: 2

  1. 250 grams fresh and light Brinjal (ask for bharta baigan, the lighter the better)
  2. 2 medium sized onions

  4. 1/2 cup green peas
  5. 1 green chilli
  6. A bunch of coriander/ cilantro
  7. Salt to taste
  8. 1 tsp red chilli powder as per choice
  9. 1 tsp cumin powder
  10. 1 tbsp ghee/ oil as preferred

  1. Roast the brinjal on the stove for 10 minutes while turning sides in between.
  2. Next, chop the onions finely along with the tomatoes.
  3. Let the roasted brinjal cool down, then clean the seeds and remove some while cleaning it under running water.
  4. Take a non-stick pan or kadai, heat the oil or ghee and add the onions. Let it change colour and add the tomatoes to stir fry.
