ABOUT Andhra Ivy gourd / Dondakkaya curry RECIPE

This ivy gourd curry serves the purpose . Children would love to relish this curry as it also has peanuts , dried coconuts , sesame seeds which enriched the flavour and texture of the curry .

Ingredients Serving: 4

  1. Ivy gourd 250gms
  2. peanuts 3 tablespoons
  3. Dried coconuts 2 tablespoons
  4. sesame seeds 3 tablespoons
  5. Green chillies 2
  6. Big sized onion 1 roughly chopped
  7. Turmeric powder 1/2 teaspoon
  8. Red chilli powder 1 teaspoon
  9. Coriander powder 1/2 teaspoon
  10. Mustard seeds 1/2 tsp
  11. Cumin seeds 1/2 tsp
  12. salt 1 1/2 teaspoon
  13. Oil 2 tablespoons
  14. Lemon juice 1 tsp
  15. curry leaves 10 leaves
  16. Cilantros freshly chopped for garnishing

Instructions

  1. In a pan , heat 1 tablespoon oil , add the vertically slit ivy gourds and gently fry for two minutes . Switch off the flame .
  2. In another pan , dry roast peanuts , dried coconut pieces and white sesame seeds separately . First peanuts to be roasted gently , transfer it a plate , then sesame seeds , roast and transfer . The same for dried coconut pieces . In case of non availability of dried coconuts , add readymade dry coconut powder. Cool them completely and grind into a powder .
  3. In a pan , heat oil , add the roughly chopped onions, green chillies ( optional for kids ) , sauté till onions turns colour . Switch off the flame . Cool this completely and grind along with the already ground powder using little water .
  4. Now take a pan in which you fried ivy gourd , add this ground mixture to the fried vegetable, add turmeric powder , coriander powder , red chilli powder , salt . Mix them all well and let it cook for 5 minutes till the curry leaves out oil .
  5. Add little water to adjust the consistency of the curry . Once done switch off the flame.
  6. Add curry leaves , chopped coriander leaves and 1 teaspoon lemon juice .
  7. Serve hot with steamed rice /dosas /rotis of your choice .
