Ingredients to make Puliyodarai Mix

  • Spice powder
  • 1/4 cup coriander seeds
  • 3 tsp Channa dal
  • 3 tsp pepper
  • 1 tsp methi
  • 3-4 tsp sesame seeds
  • 12 Red chillies
  • For Puliyodarai Mix
  • 1/2 cup Sesame oil
  • mustard 1 tsp
  • Channa dal 3 tsp
  • Ground nut 3 tsp
  • Red chillies 4
  • curry leaves
  • tamarind 1 Big Lemon size
  • turmeric powder 1/2 tsp
  • hing 1/2 tsp
  • salt 2.5 tsp
  • jaggery 1 tsp

How to make Puliyodarai Mix

  1. SOAK BIG LEMON SIZE TAMARIND FOR 1 HOUR TO GET THICK PULP
  2. DRY ROAST 1/4 CUP CORIANDER SEEDS TILL YOU GET GOOD AROMA
  3. DRY ROAST 3 TSP PEPPER
  4. DRY ROAST 3 TSP CHANNA DAL
  5. DRY ROAST 4 TSP SESAME SEEDS
  6. DRY ROAST 1 TSP METHI AND 12 RED CHILLIES
  7. COOL THE INGREDIENTS COMPLETELY AND GRIND TO FINE POWDER
  8. ADD 1/2 CUP SESAME OIL. ADD 1 TSP MUSTARD. ALLOW TO CRACK
  9. SAUTE 3 TSP CHANNA DAL AND GROUNDNUTS
  10. ADD 4 RED CHILLIES, 1/2 TSP HING AND CURRY LEAVES
  11. ADD THICK TAMARIND PULP
  12. ADD 1/2 TSP TURMERIC POWDER AND SPICE POWDER
  13. ADD 2.5 TSP SALT. MIX WELL. ADD 1 TSP JAGGERY
  14. TURN OFF THE FLAME WHEN OIL SEPARATES
  15. PULIYODARAI MIX IS READY. STORE IT IN AIRTIGHT CONTAINER. USE AFTER 6 HOURS FOR BEST TASTE.

My Tip:

If possible soak tamarind overnight to get thick pulp. Use this mixture after 6 hours for the best taste
