About Dhuska (lentils pancake) Recipe

Dhuska, a traditional snack/breakfast recipe of Jharkhand is a savory snack and takes very little effort to prepare. It’s normally served with ghugni/chana masala, but it can be relished equally with a cuppa!

Dhuska (lentils pancake)

Ingredients to make Dhuska (lentils pancake)

  • 3/4 cup rice
  • 1/2 Cup chana Daal
  • 2 tbspn urad daal
  • 1 tspn cumin seeds
  • 3 green chillies
  • 4-5 tbsp chopped coriander leaves
  • 1 large chopped fine
  • 1 tspn asafoetida powder
  • salt to taste
  • 1 inch ginger grated
  • 3-4 garlic pearls chopped finely

How to make Dhuska (lentils pancake)

  1. Wash and Soak rice and dale separately for 4 hours
  2. Drain all the water from the dal and rice, then grind them separately using some water.
  3. In a blender, grind green chili, ginger and garlic finely
  4. Mix all 3 batters prepared above to make a semi-thick batter.
  5. Add turmeric , cumin, hing, chopped onion, coriander leaves and mix well .
  6. Rest the batter for 10 minutes.
  7. Heat enough oil for deep frying in a wok.
  8. Pour a ladleful of batter in the center of the kadhai when oil is hot.
  9. As the dhuska puffs, flip and fry the other side. When both the sides turn light golden brown in colour, take off heat
  10. Keep the fried dhuskas on a absorbent paper. Repeat the same procedure with rest of the batter.
  11. serve hot/room temperature with tea
