ABOUT Chokha/Aloo Baingan Bharta RECIPE

Ingredients Serving: 4

  1. Boiled potatoes 3 large sized
  2. Brinjal 2 large sized
  3. Chopped coriander 2 tbsp
  4. Chopped chillies 2
  5. Ginger chopped 1 inch piece
  6. Garlic 7-8 cloves
  7. Onion finely chopped 2 medium sized
  8. Tomatoes chopped 2 medium sized
  9. Mustard Oil 1 tbsp
  10. Salt to taste
  11. Chilli powder 2 tsp

Instructions

  1. Put some oil on the brinjals, make slits and put the garlic into the slits and smoke it on a stove top. Once its done put it into the water and peel the skin.
  2. Mash and mix the boiled potatoes and smoked brinjal.
  3. Heat oil in a pan, add the jeera, chillies, onion, ginger-garlic and cook till the onion turns translucent. Then add the tomatoes and cook for 2 mins.
  4. To this add the potato and brinjal mixture.
  5. Season with salt, red chilli powder and some mustard oil and serve it warm or at room temperature.
