Khandvi (Patudi)

Ingredients to make Khandvi (Patudi)

  • 1 cup besan
  • 21/2 cup butter milk
  • 1/4 tsp turmeric
  • 2 tsp green chilli and ginger paste
  • pinch hing
  • salt as per taste
  • **Ingredients for tempering :
  • 1tbsp oil
  • 1/2 tsp mustard seeds
  • ** Ingredients for Garnishing :
  • coriander
  • Grated dry coconut
  • Sev

How to make Khandvi (Patudi)

  1. In a pan take besan, green chilli and ginger paste,hing and salt. Mix it well.
  2. Now add buttermilk in small batches.Mix well with hand whisk. There should be no lumps in batter.
  3. Now put pan on gas. Stir continuously. Cook on medium flame.
  4. When the mixture becomes thick spread on greased kitchen platform or on thali.
  5. After 1 or 2 mins put cut on it and then roll it.
  6. In another pan take oil and add mustard seeds. when it crackles pour it on rolls.
  7. Garnish with coriander , Sev and grated dry coconut.

My Tip:

you can stuff khandvi with grated cheese or veggies.
