Mixed Vegetables Soup

Ingredients to make Mixed Vegetables Soup

  • Baby carrots 1/3 cup
  • Celery stalk 1/3 cup
  • Sweet corns 1/4 cup
  • Frozen/fresh peas 1/4 cup
  • Green onions 1-2
  • onion 1 medium chopped
  • garlic 3-4 finely chopped
  • bay leaves 1-2
  • olive oil /any cooking oil 2 tsp
  • Black pepper corns 2-3
  • salt to taste
  • water 4 cup

How to make Mixed Vegetables Soup

  1. Heat oil in a pot, add bay leaves and black peppercorns.
  2. Add onion and the white part of green onion and saute. Once it changes color, add garlic and saute till raw aroma goes off.
  3. Add all the vegetables and salt saute for 5 minutes. Add water once it starts boiling
  4. Now add green onions, reduce heat to sim and let vegetables cook.
  5. Check soup consistency and salt. Remove bay leaves and peppercorns before serving.

My Tip:

Add vegetables of your own choice. If u wish sprinkle white pepper powder on top at the time of serving.
