ABOUT Podi dosa RECIPE

Podi dosa is one famous breakfast recipe from Tamil Nadu . Podi dosas are a must in weddings in some part of Tamil Nadu. Spongy soft dosas cooked in sesame oil , topped with spicy podi ( gun powder ) is an absolutely drooling combination .

Ingredients Serving: 3

  1. Dosa batter 1 cup
  2. Salt a pinch
  3. Idli / dosa podi ( gun powder ) 3 tablespoons
  4. Sesame oil 2 tablespoons
  5. For the dosa batter :
  6. Idli rice 3 cups
  7. urad dal 1 cup
  8. White poha soaked 1 cup
  9. Fenugreek seeds 2 tablespoons
  10. Ice water for grinding the batter .

Instructions

  1. Batter preparation :
  2. Wash , clean and soak idli rice for 5 hours . Add fenugreek seeds to it while soaking .
  3. Wash , clean and soak urad dal for 2 hours . Last one hour , refrigerate .
  4. Soak white poha for 30 minutes .
  5. While grinding the batter , grind the rice first . Urad dal heats up the machine so finishing the rice first is always better .
  6. Then add urad dal and poha and grind using ice water . If the urad dal heats up , the Dosas wouldn’t turn soft and spongy .
  7. Mix the batter using your hands for better fermentation .
  8. Leave it overnight for fermentation .
  9. Heat a small inch pan . Pour one ladleful batter and shake the pan so that the batter spreads
  10. into a medium thickness dosa . Smear a teaspoon of sesame oil . The pan should be hot , before
  11. Pouring dosa . The lower side is cooked and upper side has no liquid. Now take a tablespoon of podi
  12. Idli chilli powder and sprinkle over the dosa . The quantity is as per your taste .
  13. Cover the pan with a lid for a minute so that the dosa becomes soft and cooks evenly .
  14. We will not flip the dosa in this podi dosa version . Serve hot .
  15. Softy podi dosas are ready to serve .
