Gavar jo saag

Ingredients to make Gavar jo saag

  • Gavar 250gms
  • oil 2tbsp
  • mustard seeds 1/2 tsp
  • Cummin seeds 1/2tsp
  • sesame seeds 1/2tsp
  • ginger grated 1tsp
  • curry leaves 10
  • turmeric. 1/4 tsp
  • Asefoetida 1/4 tsp
  • red chilli powder 1/2tsp
  • coriander seeds powder 1 tsp
  • salt to taste
  • jaggery 10gms
  • water 1/2 cup
  • dessicated coconut 1tbsp
  • coriander to garnish

How to make Gavar jo saag

  1. Heat oil in a pressure cooker.
  2. Add mustard seeds, let it sputter Cummin, sesame, curry leaves, ginger, turmeric and asafoetida.
  3. Add the chopped cluster beans and saute for 2 minutes till it is wrapped well with the tadhka. Add little salt and further saute for a minute.
  4. Add water and close the lid.
  5. Pressure for two whistle.
  6. Remove from flame.
  7. When cooked open add the jaggery and adjust the salt.
  8. Add the remaining ingredients and further cook with open lid till the jaggery melts and the dish is dry.
  9. All the spices should wrap onto the gavar.
  10. Remove from flame garnish with chopped coriander.
  11. Serve with chapatti and curd.
