An easy , interesting omlette recipe from Thai cuisine . This Thai style omelette holds multiple soft layers with crispy edges . Perfect for brunch / breakfast .

Thai omelette ( Khai Jiao)

Ingredients to make Thai omelette ( Khai Jiao)

  • Large eggs 2
  • Fish sauce 1 teaspoon
  • lime juice 1 Teaspoon
  • salt as required
  • Corn flour 1 tablespoon
  • oil 2 tablespoons
  • water 1 tablespoon

How to make Thai omelette ( Khai Jiao)

  1. In a bowl , take corn flour mixed in a tablespoon of water . Corn flour paste should look lump free .
  2. Now add fish sauce , salt , lime juice .
  3. Beat , break and pour the eggs into the mixture .
  4. Whisk the egg mixture thoroughly to a frothy consistency .
  5. Meantime , heat oil in a deep wok .
  6. Don’t use flat pan for this Thai style omlette .
  7. Oil should heat up to smoking point . That is very important for a perfect Thai omelette layers .
  8. Now pour the beaten egg mixture from minimum one foot height so that the omelette puffs up with layers and rises in size . Pour the mixture in one go and needn’t worry about the shape . The edges should be asymmetrical.
  9. Once the egg mixture is poured , reduce the flame .
  10. Flip the omelette to another side and cook for half a minute .
  11. Finally transfer the omelette to a plate along with the oil . This is how this omelette is tasted and enjoyed .
  12. Thai style omelette carries extra oil which makes this omelette unique and yummy .
  13. Serve this Khai Jiao with steamed Jasmine rice topped with sriracha sauce .
  14. Enjoy the omelette immediately .

My Tip:

Use a deep wok and not flat pans . Use extra oil . Heat the oil to smoking point for omelette to puff up with layers .
