Ingredients to make Kolkata style chicken biryani

  • Basmati rice...300gm
  • cinnamon stick...1"
  • Green cardamom...4
  • cloves...4
  • star anise...1
  • Jayatri...1
  • lemon juice....1tspn
  • chicken...500gm
  • curd...50gm
  • ginger garlic paste...3tspn
  • red chilli powder...2tspn
  • turmeric powder...3tspn
  • cumin powder...1tspn
  • coriander powder...1tspn
  • Chopped onion...1 big
  • Garam masala...1tspn
  • egg...3
  • Boiled potato...3
  • onion birista...1 bowl
  • Meetha aatar...1drop
  • Rose water...3 drops
  • Keora water...3 drops
  • ghee...1/2cup
  • oil ...4tspn
  • wheat flour...1cup(for coating the pan)

How to make Kolkata style chicken biryani

  1. Marinate the chicken with salt, ginger garlic paste, red chilli powder, turmeric powder, curd,cumin powder, coriander powder & oil.Marinate it for at least 5 to 6 hours.
  2. Soak rice in water for 15 minutes & then boil it with lemon juice , star anise, cloves,jayatri,green cardamom & cinnamon stick.
  3. Heat oil, add salt & turmeric powder & fry boiled eggs & potatoes in it.
  4. Fry & take out from oil.
  5. Add chopped onion & ginger garlic paste.Saute it for a while.
  6. Add all spices.
  7. Add marinated chicken & mix it well with spices.Add some hot water, cover it & let it cook till boil.
  8. Add boiled & fried eggs & potato in it to mix with spices.When spice mix with it properly take out eggs & potatoes from gravy.
  9. Now assembling time.Take a heavy bottomed vessel, put cooked chicken in it.
  10. Spread one layer of half cooked rice on it.
  11. Place boiled, fried eggs & potatoes, biryani masala,onion birista & ghee.
  12. Cover this layer with rice again.Sprinkle suffron mix milk,meetha aatar, rose water, keora water.Cover with lid & seal it with flour dough.Cook it in low flame for at least 20 minutes.After that switch off the flame & keep rest for another 15 minutes.
  13. Its ready now.Serve it with salad & raita.
