About Kaju katli Recipe

This is my personal favourite of Rajasthani sweets, made with cashew nuts.

Kaju katli

Ingredients to make Kaju katli

  • Kaju (cashew nuts) - 1 cup
  • sugar - 1/2 cup
  • water - 1/4th cup
  • Milk - 1 tbsp
  • ghee (for greasing)

How to make Kaju katli

  1. Make coarse powder of the kajus using a mixer grinder.
  2. Now make a sugar syrup using the water and sugar (ek taar wali chashni or one string consistency).
  3. Add the kaju (cashew nuts) powder to the chasni ,while stirring continuously on a low flame.
  4. Keep stirring till it forms a non sticky dough, add the milk if the dough gets a little dry.
  5. Now knead the dough while it is warm to smoothen it. Roll it using a rolling pin and cut them into the diamond shape. Use ghee, on the surface wherever you are rolling the dough.
