ABOUT KASHMIRI PULAO RECIPE

This is a delicious recipe of kasmiri pulao, a yummy recipe to be served on its own.

Ingredients Serving: 2

  1. Basmati rice – 1 cup
  2. Boiled and chopped carrot, peas, french beans – 1/2 cup
  3. Fruit chopped (pineapple or cherry) – 1 tbsp
  4. Vegetable oil (ghee) – 1 tbsp
  5. Mava or solidified milk
  6. Grated cottage cheese (paneer) – 1 tbsp
  7. Saffron (dipped in little milk) / yellow food colour – less than 1/2 cup
  8. Fresh Cream – 1 tbsp
  9. Cardamom powder – 1 tsp
  10. Sugar (optional) – 2 tsp
  11. Saffron (dipped in little milk) / yellow food colour – less than 1/2 cup
  12. For tadka (tempering) – bay leaf, cloves and cumin seeds
  13. For garnishing – fried cashews, cherry and cardamom powder.

Instructions

  1. Wash rice well, and let it soak in water for 1 hour.
  2. Cook rice in a way that the grains don’t stick to each other.
  3. Heat some vegetable oil in a pan and add the ingredients of tadka in it.
  4. Add cooked rice, chopped fruits, boiled and chopped vegetables and mix well.
  5. Then add mava or solidified milk, cottage cheese, salt, sugar and fresh cream and mix well.
  6. Add saffron infused milk and mix well.
  7. Serve in a serving bowl, and garnish with fried cashews, cherries and cardamom powder.
