Hyderabadi style of biryani made with jack fruits, to be served for dinner party occasions.

Ingredients to make Katthal Biryani with Blooming Roasted Onion Flower and Vinegar Pickled Onions

  • 1/2kg Jackfruit(katthal)
  • 2tsp ginger-Garlic Paste
  • 1/2tsp asafoetida
  • 5-6 peppercorn
  • 1 inch cinnamon stick
  • 4-5 cardamom
  • 5 cloves
  • 1tsp cumin
  • 3 bay leaves
  • 300gms Basmati rice
  • 1 onion diced
  • oil
  • salt to taste
  • Pure ghee
  • 4-5 green chillies
  • 1Big onion for roasting
  • 2tsp Garam masala
  • 1tsp chilli powder
  • 1/2tsp Rose water
  • 1/2 kevra essence
  • Green coriander for garnishing

How to make Katthal Biryani with Blooming Roasted Onion Flower and Vinegar Pickled Onions

  1. Heat oil in a wok and saute cinnamon stick, cardamom, bay leaf, cloves and add water and cook Rice.
  2. In another wok, heat oil and saute Ginger-Garlic paste, diced onions, asafoetida, cumin and Jackfuit.
  3. Pour some water and cook Jackfruit until soft
  4. Now add garam masala powder and salt and pepper to it and cook until water soak.
  5. Add green chillies and cooked rice and cook for a minute.
  6. Add some drops of rose water and kevra essence. And cover with lid.
  7. For Blooming Onion, cut the onion in little petals shapes and pour some ghee on it and roast on tawa or oven until edges become golden. Do not over cook Or burn the onion.
  8. Serve with corriander leaves and enjoy.
