Ingredients Serving: 8

  1. Chopped Raw Mango (Kate Ache Aam) - 1 Cup
  2. Jaggery (Gur) - 50 Grams
  3. Fenugreek Seeds (Methi Dana) - 1 Tea Spoon
  4. Mustard Seeds (Rai) - 1 Tea Spoon
  5. Cumin Seeds (Jeera) - 1 Tea Spoon
  6. Carom Seeds (Kalonji) - 1 Tea Spoon
  7. Fennel Seeds (Saunf) - 1 Tea Spoon
  8. Bay Leaves (Tej Patta) - 2 to 3
  9. Black Pepper (Kali Mirch) - 5 to 6
  10. Red Chilli Powder (Lal Mirch Powder) - 1 Table Spoon
  11. Turmeric Powder (Haldi Powder) - 1 Tea Spoon
  12. Coriander Powder (Dhaniya Powder) - 1 Tea Spoon
  13. Whole Spice Powder (Garam Masala) - ½ Tea Spoon
  14. Oil - As Per Requirement
  15. Salt (Namak) - According to Taste

Instructions

  1. Heat oil in a non-stick pan or kadai, once the oil is hot add black pepper and bay leaves. Cook it for 2 minutes or till they leave fragrance In oil.
  2. Now add fenugreek, cumin, mustard, carom and fennel seeds and all them get crackled.
  3. Add cut raw mango and cook it for 2 to 3 minutes
  4. At this stage add all dry ingredients like red chilli, turmeric and coriander powder and season it with salt according to taste. Mix all the ingredients and cook for 2 minutes or till the oil get separated from masala.
  5. Add jaggery and cook till it get melted. Add ½ cup of water and cook it for 5 to 6 minutes or till the gravy becomes thick on slow flame.
  6. Finely add whole spice powder and cook it for 1 more minute
  7. Now the dish are ready can be served
