ABOUT RAJASTHANI BANJARA GOSHT RECIPE

As the name suggests, this recipe is very common amongst the Banjaras of Rajasthan. Simple mutton curry with basic spices makes a delightful & heartwarming meal

Ingredients Serving: 4

  1. mutton on bone 1/2 kgs
  2. onion, sliced 2 nos
  3. 1/4 cup oil/ ghee
  4. Garlic Cloves 10
  5. Ginger 1 inch
  6. Dry red chillies 2-3 (i have used spicy ones)
  7. Coriander seeds 1 teaspoon
  8. Cumin seeds 1 teaspoon
  9. Black pepper corns 1 teaspoon
  10. Cloves 1 teaspoon
  11. Green cardamom 3
  12. Bay leaves 2
  13. 1 inch Cinnamon stick
  14. Curd 100gms
  15. Tumeric powder 1/2 teaspoon
  16. Coriander powder 1 tablespoon
  17. Garam masala powder 1 teaspoon
  18. Salt as per taste

Instructions

  1. Wash clean the mutton pieces &put them in pressure cooker
  2. To this add 1 teaspoon salt, 1/2 teaspoon turmeric powder & 1 cup warm water. Pressure cook for 4 whistles on a medium flame
  3. Dry roast coriander seeds, cumin seeds, black pepper & cloves.
  4. Coarsely pound pound these roasted spices along with ginger, garlic & dry red chilli.
  5. Heat oil in a pan & add green cardamom, bay leaves & cinnamon stick. Allow them to crackle
  6. Next add the sliced onions & saute until they turn golden.
  7. Now add the coarse spice mix and saute for a minute
  8. Add the mutton pieces to this. Do not discard the mutton stock.
  9. Also add 1/4 teaspoon turmeric powder, 1 teaspoon coriander powder & 1 teaspoon garam masala
  10. Saute this for 1-2 minutes.
  11. Add the mutton stock & 1 cup warm water. Simmer this for 10 minutes on a low flame
  12. Finally add the curd and cook until the gravy thickens.
  13. Serve with jawari bhakri & rice.
