Ingredients Serving: 3

  1. Soaked basmati rice 1.5 cups
  2. Boiled chole 1 cup
  3. Chopped onion -1 medium
  4. Chopped coriander leaves
  5. Chopped mint leaves
  6. Ghee 2 tbs
  7. Turmeric powder 1/2 tsp
  8. Coriander powder 1/2 tsp
  9. Salt to taste
  10. Biriyani masala 1.5 tsp
  11. Kashmiri red chilli powder 1 tsp
  12. Degi mirch 1.5 tsp
  13. Biriyani essence 1 tsp
  14. Curd 1/2 cup
  15. Saffron Strands 10-12
  16. Milk 2 tsp
  17. Oil 2 t.5 tbs
  18. Bayleaf 2
  19. Black pepper 5
  20. Cloves 5
  21. Cumin seeds 1/2 tsp
  22. Star anise 2
  23. Cinnamon stick 2
  24. Ginger-garlic paste 1.5 tsp

Instructions

  1. ADD 1 TSP EACH OF OIL & SALT INTO BOILING WATER
  2. ADD ALL THE WHOLE SPICES, 1.5 CUPS SOAKED RICE, STIR & COOK FOR 8-10 MINS ON LOW HEAT
  3. TAKE OFF HEAT WHEN THE RICE IS ALMOST DONE, STRAIN & SET ASIDE
  4. TAKE 1/2 CUP CURD, ADD SALT TO TASTE, 1 TSP KASHMIRI RED CHILLI POWDER
  5. ADD 1.5 TSP DEGHI MIRCH POWDER, 1/2 TSP TURMERIC POWDER
  6. ADD 1/2 TSP CORIANDER POWDER, 1.5 TSP BIRYANI MASALA
  7. ADD 1.5 TSP GINGER-GARLIC PASTE, MIX WELL
  8. ADD 1 CUP BOILED CHICKPEAS, MIX
  9. ADD 2 TBSP CHOPPED FRESH CORIANDER, 1 TBSP MINT LEAVES, SET ASIDE
  10. HEAT 2 TBSP OIL, ADD 1/2 TSP CUMIN, 5 EACH OF PEPPERCORNS & CLOVES, 1 SLICED ONION, SAUTE FOR 1 MIN
  11. ADD THE CHICKPEA MASALA MIX, COOK FOR 2-3 MINS ON LOW-MEDIUM HEAT
  12. LAYER IT WITH THE COOKED RICE
  13. ADD 1 TSP BIRYANI / KEWRA ESSENCE
  14. SPRINKLE SOME CHOPPED CORIANDER & MINT LEAVES
  15. ADD 10-12 SAFFRON STRANDS PRE- SOAKED IN 2 TBSP WARM MILK
  16. ADD 2 TBSP GHEE
  17. COVER & COOK FOR 15-20 MINS ON LOW HEAT
  18. THE BIRYANI IS DONE, SERVE HOT WITH RAITA
