Masaledar Rajasthani Gatta Pulao

Ingredients to make Masaledar Rajasthani Gatta Pulao

  • 1 cup gram flour (besan )
  • 1 tsp salt
  • 2 tsp chilly powder
  • 1 tsp turmeric powder
  • 1/4 tsp carrom seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp oil
  • Lukewarm water to make soft dough
  • for pulao
  • 2 cups boiled rice
  • 2 medium size onion
  • 1 inch ginger
  • 4-5 cloves garlic
  • 4 green chillies or as per spice you handle
  • 1/4 cup peas
  • Fresh chopped coriander for garnish
  • spices
  • salt to taste
  • 2 tsp red kashmiri chilli powder
  • 1/2tsp turmeric
  • 1/2 tsp garam masala
  • 1 tsp cumin powder
  • 2 green cardamom
  • 5-7 black pepper
  • 2 tbsp oil
  • oil for frying gatte
  • Water to boil gatte
  • I used 2 cups cooked leftover rice
  • For basmati rice
  • 2 cups rice
  • 5 cups water
  • 1 tsp salt

How to make Masaledar Rajasthani Gatta Pulao

  1. First we will make gatte
  2. First in a bowl add besan and all spices like salt chilli powder turmeric..
  3. Add oil and lukewarm water to make soft dough.. Add water little by little not much..
  4. Now divide the dough and make rolls out of it.
  5. Boil water in a pan.. Put all Gatta rolls and boil it till it float on water.. Switch off the flame.
  6. Let it cool and cut it..
  7. Heat oil in a pan when oil is hot enough put all gatte and fry it on low medium flame till golden in color..
  8. Now making pulao.. We need cooked rice..
  9. 2 cup cooked basmati rice.. Or can cook For rice wash and soaked 2 cups basmati rice. boil 5 cups water add 1 tsp salt add rice.. When rice cooked 80% switch off the flame and strain all water.. Take rice inbig bowl or plate.. Spread it and let it cool..
  10. Now final step Heat 2 tbsp oil. when oil is hot enough
  11. Add cardamom and black pepper corn
  12. Add finally chopped onions ginger garlic and green chili, add matar..
  13. Add all spices like chilli powder, turmeric powder, salt, garam masala, mix everything well
  14. Add fried gatte. Add 1/4 cup water
  15. Mix well. Add cooked rice.. Mix everything well.
  16. Add spice and salt if anything less.
  17. Mix everything well. Garnish with chopped fresh coriander.. Serve hot with Papad or Raita..

My Tip:

Boil gatte properly.. To check add toothpick if it comes out clean. It done.. You can add more veggies if you wish to
