ABOUT Gatte Bhat ( green gram and gram flour gatta Pulao.) RECIPE

My grandmother was making gatte bhat so when I saw so many gatte ki sabji that reminds me this age old recipe. She used to fry gatta, make vege and than add to rice. I had steamed green gram as yesterday we had paani poori. So I thought of adding it to my gatta. And friends here is an INNOVATIVE RECIPE.

Ingredients Serving: 3

  1. For gatta:
  2. Green gram steamed 1 cup
  3. Gram flour 1 cup
  4. Curd 1 tbsp
  5. Coriander powder 1 tsp ( preferably fresh ground)
  6. Zeera powder 1 tsp ( preferably fresh ground)
  7. Salt and chilli to taste
  8. Ajwain 1 tsp
  9. Garlic crushed 1 tsp
  10. Oil 2 tsp
  11. For gatta vegetable:
  12. Onion chopped 1 (big)
  13. Curd 2 tbsp (not very sour)
  14. Ginger grated 1 tsp
  15. Garlic crushed 1 tsp
  16. Dhania powder 1 tsp
  17. Salt and chilli to taste
  18. Coriander leaves finely chopped 1 tsp
  19. Kasoori methi roasted 1 tbsp
  20. For boiling gatta :
  21. Water a big pan
  22. Oil 2 tsp
  23. Salt 1/2 tsp
  24. For making pulao :
  25. Rice 1 cup
  26. Khada masala few cinnamon, cardamom, cloves, bay leaves, star anise etc.
  27. Curd 2 tsp
  28. Ghee/ oil 1 tbsp
  29. Salt to taste
  30. For frying gatta:
  31. Oil for deep frying.
  32. Onions 2 for garnishing

Instructions

  1. First we will make gatta.
  2. Mix gram flour, green gram and all mentioned masala above.
  3. Form a dough. Take a tomato sized ball and give cylindrical shape. Form all.
  4. Heat water in a big pan. Add salt and oil. As it boils drop gatta one by one. Keep the flame medium high.
  5. When gatta floats on top, they are cooked. Take them out carefully with a slotted spoon and allow to cool properly.
  6. Till gatta gets cooled we will prepare the rice.
  7. Heat ghee/ oil in a pan. Add all khada masala, let fry. Remove some out of ghee for fresh grinding.
  8. Add zeera and simultaneously rice. Saute till it gets brown color.
  9. Now add hot water and cook till done.
  10. Now chop the cooled gatta,
  11. Heat oil in a pan and fry them golden brown.
  12. Fry onions for garnishing in same oil and keep aside.
  13. Heat oil in another pan ( you can use same oil also), add mustard seeds and asafoetida.
  14. After it crackles add onion, saute a little. Add all masala and curd. Saute well. Add half cup water and add fried gatta.
  15. Let it soften a little in gravy (just for 5 minutes). Adjust the masala. Crush roasted kasoori methi between the palms and add.
  16. Check the rice. Now spread the cooked vegetable on rice.
  17. Cover the rice, keep an iron griddle under your pan and cook for 5 minutes more.
  18. Mix the rice and vegetable. And your delicious innovative gatta pulao is ready. Garnish with sauted onion and coriander leaves.
