Bengalis are fond of sweets and they both begin and end up every function with sweet dish.One of such traditional Bengali sweets is Malai Chamcha.It is of many variety.I am going to describe one of it; ie Milk Powder Malai Chamcham.

Milk Powder Malai Chamcham

Ingredients to make Milk Powder Malai Chamcham

  • For The Chamcham: Milk powder - 1cup (1 cup = 250 ml)
  • sugar - 4 tablespoon
  • Liquid milk - 200 ml
  • all purpose flour - 1 table spoon
  • baking soda - ¼ teaspoon
  • cardamom powder - ¼ teaspoon
  • water - as required to make the dough
  • For Garnishing: Sandesh - 1(to be powdered with hand)
  • dates - cut into small pieces

How to make Milk Powder Malai Chamcham

  1. At first mix milk powder,flour and baking soda together.
  2. Add a little water to make the dough.
  3. Dough must be soft.Another ½ teaspoon of flour can be added if the dough seems excessively soft.
  4. Now,make small balls from the dough and shape them into Chamcham.
  5. Make all the chamchams from the dough like this.
  6. Heat a pan and boil the milk.Add sugar and stir continuously to avoid burning the sugar.Also add cardamom powder to the milk.
  7. Add the chamchams carefully when the milk gets a little condensed but the milk should not be much condensed otherwise the sweets may break.
  8. Let the milk boil with the sweets.Switch off the burner and let them cool.
  9. Now,place the chamchams on a plate.
  10. Pour the milk on it.
  11. Refrigerate the sweets for half an hour.
  12. Finally garnish the chamchams with powdered sandesh and date pieces.
  13. Serve cold.

My Tip:

Hands can be greased with ghee while making the chamchams.
